Spicy Jalapeno Dip

INGREDIENTS:
1 Cup Non-Fat Greet Yogurt OR 2% Greek Yogurt*
1 Cup Avocado Mayonnaise OR Mayonnaise of your choice
6 large Jalapeno peppers
1 large bunch Cilantro
1 Packet Hidden Valley Dry Ranch Dip mix OR any Hidden Valley Dry Ranch Packet
DIRECTIONS:
Remove stems from jalapenos and slice lengthwise to expose seeds. If you prefer a less spicy dip, you can scrape out the seeds from the peppers now. Next, remove stems from cilantro.
Puree cilantro and peppers in a food processor until you achieve a thick paste.
Place mixture to a large mixing bowl.
Add yogurt, mayonnaise, and ranch dip packet to the peppers and cilantro mix and stir until well combined. Make sure to scrape the bottom of the bowl to incorporate all the ingredients!
Refrigerate for 30 minutes or up to 1 hour so spices can blend.
Once ready, transfer to a serving dish and serve with wholegrain pita chips and fresh veggies!
*You can always substitute the yogurt with a lighter version of sour cream.
Slimmed Down Buffalo Chicken Dip
Serves: 8-10

INGREDIENTS:
2 12.5 oz. Cans Canned Chicken (any brand works)
1 Cup Non-Fat Greek Yogurt OR 2% Greek Yogurt*
1 ½ Cup Shredded Cheddar & Monterey Jack Cheese blend
½ Cup Frank’s Red-Hot Buffalo Sauce
½ Cup Crumbled Blue Cheese*
1-2 Green Onions
DIRECTIONS:
Preheat oven to 350 degrees.
Slice green onions and place in a small bowl. Set aside.
Combine chicken, yogurt, 1 cup cheddar cheese, buffalo sauce, and ¼ cup blue cheese in a large mixing bowl.
Mix until well combined.
Pour into an 8x9 baking dish. Sprinkle with remaining ½ cup Cheddar and Monterey jack cheese blend on top.
Bake on middle rack in the oven for 30min.
Once baked, remove from oven and let cool for 5 minutes. Top with green onion slices and the remaining blue cheese crumbles.
Serve with celery sticks, multigrain chips and other fresh veggies!
*The blue cheese in this recipe is optional. You may omit it completely or reduce the amount to your liking. If you chose to omit the blue cheese the calorie count would drop to 367 calories/serving with 4.2g of fat.
